Gear up your kitchen for healthy, fruit and veggie filled meals. Our registered dietitian has selected some of her heart-healthy favorites to get you started using light ingredients and, you guessed it, fruits and vegetables as the main ingredients.

 
Holiday 2008 Favorites

Healthier Green Bean Casserole
Gingered Cranberry-Raspberry Relish
Frozen Pumpkin Mousse Pie
Maple Roasted Sweet Potatoes

Cranberry Juice Sparkler
Make a low calorie, festive “sparkler” by mixing your favorite fruit juice with diet lemon-lime or diet ginger ale and garnishing with frozen berries, citrus slices and mint sprigs.

Low sugar cranberry sauce
1 bag (12 oz) fresh or frozen cranberries
Sugar substitute equal to 1 cup
1 cup water
Orange zest

  1. Pick over cranberries, removing soft or damaged berries
  2. Add sugar substitute and water
  3. Bring to boil over medium-high heat
  4. Stir frequently until berries “pop”
  5. Cook until thickened, about 5-10 minutes
  6. Garnish with orange zest
